COCONUT CREAM PIE 
2/3 c. sugar
1/2 tsp. salt
2 1/2 tbsp. cornstarch
1 tbsp. flour
3 c. milk
3 egg yolks, slightly beaten
1 tbsp. butter
1 1/2 tsp. vanilla
3/4 c. moist coconut

MERINGUE:

3 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar
1/2 tsp. vanilla

Mix sugar, salt, cornstarch and flour. Stir in milk gradually. Cook over moderate heat, stirring constantly until mixture thickens and boils. boil 1 minute. Slowly stir half the mixture into egg yolks. Then blend into hot mixture in saucepan. Boil 1 minute more, stirring constantly. Remove from heat and blend in butter, vanilla and coconut. Pour into baked pie shell.

Cover with meringue. Sprinkle with coconut before baking. Bake 8 to 10 minutes at 400 degrees.
