“LOW FAT ALFREDO SAUCE” IS IN:

LOW FAT ALFREDO SAUCE 
1 tbsp. butter
1/4 cup all-purpose flour
1 tsp. salt
pinch nutmeg
3/4 cup grated Parmesan cheese
3 cups low fat milk
1/2 tsp. pepper
cooked fettuccine pasta

Melt butter in saucepan over medium heat. Add flour; cook, stirring, 1 minute. Whisk in milk, salt, pepper and nutmeg. Bring to a boil, whisking; reduce heat and simmer, stirring occasionally, for 5 minutes. Toss with Parmesan cheese and cooked fettuccine.

I doubled the recipe.. I took out the nutmeg sauteed the garlic with the butter through in the cheese with the sauce and my family couldn't even tell the difference. They loved it. Two thumbs up!

I love this sauce but I have a problem with it every time. How do you make it so the flour smooths out and doesn't get/stay lumpy? Also, it's really watery and I would like it to be thinker. Any suggestions?

To smooth out the flour/butter, use a whisk. Let it cook a minute or so on low heat to get rid of the flour taste but be sure to whisk it while it is cooking. Add the milk and continue to whisk it. It works every time for me even with gravies. To thicken it, add shredded Parmesan instead of grated Parmesan. It gives it a slightly stronger taste and helps to thicken it. If that fails, try a mixing a bit of cornstarch and water and stir it into the mix. Be sure to stir constantly until you get your desired thickness.

Made this tonight, it was fantastic! I did substitute garlic powder for nutmeg, and added more pepper. I also added chicken & broccoli, and used whole wheat shells... fabulous! To make the sauce a little thicker, I added a tab bit more flour. To smooth out the lumps, you have to whisk continuously. This was the first time making Alfredo sauce, and my family gave it two thumbs up!

I love this recipe! I, as many, used garlic instead of nutmeg and it was fabulous. I also added some puree of brocolie as my fiance does not eat vegetables. I steamed then over the pasta and puree them with my hand mixer. Came out very good and he could not tell I added veggies to it. Yes, the color was green but I just told him I added a little to much Parsley :-)

Just made this sauce and it was soooooo good. I also nixed the nutmeg and substituted Tastefully Simple Garlic Garlic and Onion Onion seasonings. When finished I tossed it with pasta and broccoli. Highly recommend this one.

Gave it a 3 because it needed a few things. Add fresh minced garlic (1 or 2 cloves), pancetta or proscuitto (sauteed separately) AND the nutmeg. Also finish with fresh parsley. Made it for my grandmother from Italy and she loved it.

I was almost out of low fat milk, only had one cup, so used one cup evaporated milk, 1 cup low sodium chicken broth and the low fat milk I had. I also added garlic powder and oregano in addition to the nutmeg. Yummy!

This recipe was excellent! My whole family loved it. We substituted the nutmeg for some garlic salt. Next time we will use a little less pepper. The 1/2 tsp is just a bit much. Other than that, we loved it.

I didn't have any milk. So I used some evaporated milk and chicken broth. Wasn't so good as alfredo, so I added some sausage and turned it into biscuits and gravy. Then it was great. ha.
