“LOW FAT ALFREDO SAUCE” IS IN:

LOW FAT ALFREDO SAUCE 
1 tbsp. butter
1/4 cup all-purpose flour
1 tsp. salt
pinch nutmeg
3/4 cup grated Parmesan cheese
3 cups low fat milk
1/2 tsp. pepper
cooked fettuccine pasta

Melt butter in saucepan over medium heat. Add flour; cook, stirring, 1 minute. Whisk in milk, salt, pepper and nutmeg. Bring to a boil, whisking; reduce heat and simmer, stirring occasionally, for 5 minutes. Toss with Parmesan cheese and cooked fettuccine.

To start off I'm really weird/sensitive with spices, So i omitted the nutmeg.
I also don't like a super garlicky Alfredo sauce. So for me this was a really good recipe and it's easily adjustable.

I do like a little garlic so what i do is dust my chicken pieces with a little flour and garlic powder, fry those till there done and they have a crispy crust, and then ad that to the sauce after its cooked.

I think this is an awesome base recipe, if you don't like a lot of stuff, then here you go, and you can add whatever you want to make it your own if you so choose.

To make the sauce lump free, I put the flour in a glass pint jar and add milk and shake the mixture add it to the hot butter and stir. It works for me.

This is a good recipe if you don't have any cream or half and half. However, I would definitely eliminate the nutmeg and add garlic salt in it's place. If you do have heavy cream or half and half and are looking to lower the fat content of the real thing, use half 2% milk and half cream. You can also increase the Parmesan to a full cup and use low fat. For those on a gluten free diet, I have used gluten free (Glutino) flour and it worked great, served over gluten free pasta.

I tried this before and it was good. I also added one 8oz package of fat free cream cheese when I melted the butter and flour together. Delicious!!!!!

Great recipe. This was my first try making Alfredo sauce and I'm glad we could tone down the fat and calories. Like many before me, I skipped the nutmeg and instead, used garlic powder to taste (we really like our garlic). My daughters only complaint was that she wanted MORE sauce.

Turned out great! I modified by not adding nutmeg and adding powdered oregano, and garlic instead, and added fresh red basil and garlic chives at the last minute for garnish. Separately I also cooked chicken pieces, zucchini and celery and added it at the same time as the basil and chives with tomato to make a more hearty meal.

Delicious! I added a little bit more flour and it came out perfect! The key is to keep whisking. I also added some chicken and spinach cooked together, and also some garlic powder. I will definitely make this again. :)

Amazing! Wanted to make an alfreado sauce from scratch. Was easy to prepare and tasted wonderful! Like many others I skipped on the nutmeg and added garlic powder instead. I also added diced chicken, broccoli and mushrooms!

This is very very delicious!!! especially for a low fat version. I substituted in some garlic powder instead of nutmeg, it's great!! I cut this recipe in half, so it was a little bit difficult because there was little butter, but it turned out pretty nice.

This is a really good recipe. I suggest adding Garlic Powder, Crushed Red Pepper, and Feta cheese right to the sauce. Very good with Tortellini.
