PEACH DELIGHT 
3 med. firm peaches, ripe & sliced
1 tsp. vanilla
2 tbsp. butter
3 tbsp. brown sugar, packed
1 tbsp. lemon juice

In small heavy skillet over medium heat stir butter, sugar and juice until hot and bubbly, add peaches and cook about 4 minutes or until peaches are heated but hold their shape. Remove from heat, stir in vanilla. Serve over ice cream, pound cake, or top with whipped cream.
