ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. grated zucchini
1 (20 oz.) can crushed pineapple, drained
3 c. flour
2 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 1/2 c. nuts, chopped
1 1/2 c. raisins
1 1/2 c. candied cherries

Grease 4 (8 1/2 x 4 1/2 inch) loaf pans. Preheat oven to 350 degrees. In small bowl, combine flour, soda, baking powder and salt. Set aside. In a large bowl, beat eggs and sugar. Add oil, vanilla, cinnamon and nutmeg. Beat until combined. Add zucchini, pineapple and stir until mixed. Add dry ingredients. Stir in nuts, raisins and cherries. Bake at 350 degrees for one hour.
