GOURMET BAKED ACORN SQUASH | |
3 acorn squash, halved & seeded 2/3 c. celery, diced 1 1/2 c. apples, diced & unpeeled 1/4 c. butter 1 1/2 c. soft bread crumbs 1 c. grated American cheese 1/2 tsp. salt 1/8 tsp. pepper Bake squash, cut-side down at 400 degrees for 20 to 30 minutes or until almost tender. Saute celery and apples in butter for 5 minutes; add remaining ingredients and blend. Fill squash with mixture. Bake for 10 to 15 minutes longer or until tender. Yield: 6 servings. |
