1 c. unseasoned mashed potatoes (hot) 1/2 tsp. salt 2 lb. powdered sugar 1 lb. shredded coconut 2 tsp. vanilla 1 (12 oz.) pkg. chocolate chips 4 sq. unsweetened chocolate 1/2 cake paraffin wax Mix potatoes, salt, sugar, coconut and vanilla. When completely mixed, press into 9 x 13 inch pan. Place into refrigerator to chill all the way through. After chilled, cut into 2 inch squares. In double boiler, melt last 3 ingredients together. Dip squares in chocolate mixture and place on wax paper to allow chocolate to harden. |
