SCALLOPED EGG PLANT 
1 med. egg plant, cubed
1 egg, beaten
1/2 c. milk
2 tbsp. butter
1 sm. onion, chopped fine
1 c. dry bread crumbs

Boil egg plant in salted water about 8 minutes. Drain. Saute onion in the butter, until translucent. Combine all ingredients together and put into greased casserole dish. Top with 1/2 cup buttered bread crumbs or cracker crumbs. Bake 30 minutes at 350 degrees.
