EGG PLANT CASSEROLE 
1 egg plant, peeled and cut in 1 1/2 to 2 inch pieces
1 tsp. salt
3/4 lb. smoked sausage or ham, cubed
1 med. onion, diced
1/2 bell pepper, diced
2 eggs, well beaten
Bread crumbs to cover or about 2 c.

Boil egg plant in salt water until tender, drain. Saute onions and bell pepper. Add sausage or ham and cook until almost done. In casserole dish put egg plant and all seasonings, add well beaten eggs and mix well. Add bread crumbs. Bake at 375 degrees for 25 minutes or until lightly browned.
