ZUCCHINI BROWNIES 
6 eggs
4 c. sugar
1 1/2 c. shortening
1 tbsp. vanilla
4 c. grated zucchini
1 c. cocoa
2 tsp. baking soda
2 1/2 c. flour
2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. salt
Nuts, if desired

Cream the eggs, sugar, shortening and vanilla together; set aside. Combine cocoa, soda, flour, baking powder, cinnamon, and salt; add zucchini to creamed mixture. Mix in dry ingredients and nuts, if desired.

Bake in 350 degree oven for 30 minutes.

TOPPING:

1 stick butter
4 tbsp. cocoa
6 tbsp. milk
1 box powdered sugar
1 tsp. vanilla
Nuts, optional

Mix together butter, cocoa, and milk; bring to a boil. Stir in powdered sugar, vanilla, and nuts. Put topping on brownies while still warm. Bake in 2 (9x13) pans or 2 medium size cookie sheet.
