ZUCCHINI BROWNIES | |
3 c. flour, sifted, plus 1 tsp. for the baking pan 4 tbsp. cocoa 1 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1 c. oil 1 3/4 c. sugar 2 eggs, slightly beaten 1 tsp. vanilla 1/2 c. buttermilk 2 c. peeled, grated zucchini 1 tsp. shortening for greasing baking pan 1 c. semi-sweet chocolate chips 3/4 c. coarsely chopped walnuts Preheat oven to 350 degrees. Sift the 3 cups of flour together with cocoa, baking soda, salt and cinnamon into medium bowl. Set aside. In large bowl, beat together oil, sugar, eggs and vanilla. Add dry ingredients alternately with buttermilk and zucchini. Mix with electric mixer or by hand until well blended, about 2 minutes. Pour into greased and floured 10x15 inch or 11x15 inch baking pan. Top with chocolate chips and walnuts. Bake for 25 to 30 minutes. Cut into 1 1/2 x 2 1/2 inch pieces. Makes about 24 brownies. |
