ZUCCHINI BROWNIES 
3 c. flour, sifted
4 tbsp. cocoa
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 c. oil
1 3/4 c. sugar
2 eggs, slightly beaten
1 tsp. vanilla
1/2 c. buttermilk
2 c. peeled, grated zucchini
1 c. semi-sweet chocolate chips
3/4 c. chopped walnuts

Preheat oven to 350 degrees. Sift the 3 cups of flour together with cocoa, baking soda, salt and cinnamon. Set aside.

In large bowl beat together oil, sugar, eggs and vanilla. Add dry ingredients alternately with buttermilk and zucchini. Mix with electric mixer or by hand until well blended, about 2 minutes. Pour into greased and floured 10 x 15 inch pan. Top with chocolate chips and walnuts. Bake for 25-30 minutes. Cut into 1 1/2 x 2 1/2 inch pieces. Makes about 24 brownies.
