RICE PUDDING 
1 c. rice
2 1/2 c. water
1 qt. milk
1 lg. can evaporated milk
1 c. sugar
1 tbsp. vanilla
4 tbsp. butter
Nutmeg

Boil rice in water until water boils off. Heat milk and evaporated milk until scalded. In 2-quart baking dish, put sugar. Add hot rice and milk, stir well. Add vanilla and mix well but butter. Sprinkle top with nutmeg. Bake at 350 degrees for 45-50 minutes. Top will bubble and center will be very loose; it will gel as it cools.
