FRESH ORANGE CAKE 
1 (3 oz.) pkg. orange gelatin
1/2 c. boiling water
1 yellow cake mix (2 layer)
3/4 c. vegetable oil
4 eggs
1/8 tsp. salt
1 tsp. orange extract
juice of 4 oranges
1 1/4 c. confectioners sugar

Dissolve gelatin in boiling water. Cool to room temperature. Combine cake mix and oil; beat in eggs, one at a time. Add orange extract. Mix well. Add salt and dissolved gelatin. Beat for 3 minutes. Pour into greased and floured 10-inch tube pan.

Bake at 350°F for 45 minutes or until tester comes out clean. Remove from oven and immediately pour mixture of confectioners sugar dissolved in orange juice over top of cake. Cool cake in pan for at least half a day. Even better if covered and refrigerated for 24 hours.

Serves 8 to 10.
