MURIEL'S LEMON PUDDING 
2 lemons, juice and rind
2 tbsp. melted butter
2 c. sugar
4 eggs, separated
2 c. milk
1/3 tsp. salt
4 tbsp. flour

Mix flour, sugar and salt. Add juice and rind combined with beaten egg yolks and melted butter, add milk. Fold in beaten egg whites. Bake in heat proof bowl set in a pan of hot water at 350 to 375 degrees for 45 minutes. Can be halved - also I reduce sugar almost half but I don't like real sweet pudding.
