NACHO CASSEROLE 
1 tbsp. vegetable oil
1 c. chopped onion
1 tsp. minced garlic
1 lb. ground beef or turkey
1 can (15 oz.) tomato sauce
1 packet (1 1/4 oz.) taco seasoning mix
1 can (20 oz.) kidney beans (rinsed & drained)
2 c. (8 oz.) shredded Cheddar (divided)
1 bag (8 oz.) taco chips
1/2 c. taco sauce
1/2 c. chopped scallions

Saute onion and garlic. Add hamburger or turkey. Cook and drain off fat. Stir in tomato sauce and taco seasoning; remove from heat. Mix beans with 1 cup cheese.

In 2 quart greased casserole, line bottom of dish with 1/3 of taco chips. Layer cheese bean mixture over chips. Cover with 1/3 more chips then spoon meat mixture over this layer. Top with remaining chips. Drizzle taco sauce top and sprinkle with remaining cheese and scallions. Bake at 375 degrees for 25 minutes. Serve with sour cream and sliced avocado if desired.

I tried this recipe yesterday. It came out very well, but is extremely rich, so I used shredded lettuce on top. The nacho chips end up being soft, like a nacho would be in a certain place.
