HOT JALAPENO PEPPERS 
Wash and pack peppers (sliced carrots and onions if desired) in sterilized jars.

#1:

Bring to a boil:

1 c. vinegar
1/4 c. water
1/4 c. olive oil
1 tsp. salt
1 tsp. pickling spice

Cover peppers with boiling mixture and seal. Process 10 minutes in water process.

An alternate boiling mixture is:

#2:

1/2 tsp. spices
1 tsp. salt
1 c. water
1 c. vinegar

Use whichever you like best #1 or #2 to cover the peppers.
