FRESH COCONUT CREAM FROSTING 
1 c. heavy cream
1/2 tsp. vanilla
3 tbsp. confectioners sugar, sifted
1 c. grated fresh coconut

Whip cream until stiff. Add vanilla and fold in sugar. Spread between layers and over top of cake. Sprinkle with coconut. Will frost two (8 inch) layers.
