DIABETIC CAKE 
1/2 c. butter or oil
1 tbsp. Sweet-10 liquid sweetener
2 tsp. baking soda
1 c. dried dates or prunes, chopped
1 1/3 c. sugar-free applesauce or bananas, mashed
1/4 tsp. cloves
2 c. self-rising flour
2 eggs
1/2 tsp. salt
1/2 c. pecans, chopped

Cream butter or oil, eggs, Sweet 10 sweetener, soda, salt, spices, applesauce or bananas, and flour, mix well. Fold in dates or prunes and pecans. When done set in pan for 10 minutes. This cake must be refrigerated.
