DIABETIC CAKE 
1 c. raisins
1/2 c. chopped dates
1 c. chopped apples
3/4 c. nuts
1/2 c. Crisco
2 eggs, well beaten
3 tsp. liquid sweetener
1 tsp. vanilla
1 tsp. baking soda
1 c. flour

Boil raisins, dates and apples in 1 cup water for 3 minutes. Add shortening. Cool, then add nuts. Mix eggs, vanilla and sweetener together. Add soda and flour. Mix egg mixture into raisin-shortening mixture. Chill.

Drop by teaspoon on cookie sheet or bake in cake pan. Bake at 350 degrees for 10-12 minutes on cookie sheet or 20 minutes for cake pan.
