RED BEANS 
1 lb. pkg. of red kidney beans
1/2 lb. ham or sausage (for seasoning)
10 c. water
1 clove garlic, chopped
1 onion, chopped
2 tbsp. butter
Salt to taste
Pepper to taste
Pinch of baking soda

Rinse beans in cold water. Combine ingredients into pot. Bring to rapid boil. Lower to medium heat and continue cooking for about 1 hour. Lower heat and cook for another hour or until beans are tender. Serve over rice.
