RED BEANS & RICE | |
1 pound polish sausage, cut into 1-inch pieces 3/4 cup chopped onions 3/4 cup chopped celery 3/4 cup chopped green pepper 2 teaspoons minced garlic 3 tablespoons butter 3 15 ounce cans pinto beans 2 bay leaves 2 teaspoons Hungarian paprika 1 teaspoon dried whole thyme 1/2 teaspoon ground red pepper 1/2 teaspoon dried whole oregano Sauté sausage, onions, celery, green pepper, & garlic in butter in a large skillet until tender. Stir beans into vegetables and add seasoning. Salt to taste. Simmer 30 - 40 minutes, remove bay leaves. Serve over rice. |
