REAL CAJUN RED BEANS AND RICE 
1 lb. dried red beans
2 qt. water
3 c. chopped onions
3 bunches chopped green onions
1 c. chopped parsley
1 c. chopped green pepper
2 cloves garlic
1 tsp. salt
1 tsp. cayenne pepper
1 tsp. black pepper
3 dashes Tabasco
1 tbsp. Worcestershire sauce
1 (4 oz.) can tomato sauce
1/4 tsp. oregano
3/4 tsp. dried thyme
1/2 lb. 95% fat free ham, chopped

Soak beans overnight. Cook beans and ham in water slowly for 45 minutes. Add all other ingredients and cook slowly for 1 3/4 hours. Stir occasionally. Cool, let stand. Reheat and bring to a boil, then lower heat and simmer for 40 minutes. Serve over cooked rice.
