3 qt. cucumbers, sliced 3 qt. green tomatoes, cut in chunks 1 qt. carrots, cut in chunks 1 sm. cauliflower, separated 2 c. onions, sliced Other (whatever you have) 1 c. salt 2 red sweet peppers, cut in strips 6 c. sugar Spices; mustard seed, celery seed, tumeric and cinnamon Mix all vegetables in large kettle and add 1 cup salt and let stand 5 hours. (I usually let stand overnight). Drain. Boil for 3 minutes; 6 cups vinegar, 2 cups water, 6 cups sugar and spices, 2 teaspoons cinnamon, 3 tablespoons mustard seed, 2 teaspoons tumeric and 1 tablespoon celery seed. Add vegetables and simmer for 10-15 minutes or cooked to the consistency you prefer. Pack in hot jars and seal. I adapt this recipe to whatever vegetables I have in the garden. If you like it extra sweet, more sugar can be added. |
