EASY TACO SOUP 
2 lb. lean ground beef
1/4 cup green onions
1 pkg. taco seasoning
1 (28 oz.) can diced tomatoes, undrained
1 (15 oz.) can cream style corn
1 (15 oz.) can black beans
1 (10 oz.) can Rotel tomatoes
2 cups water
1 pkg. Velveeta cheese, cubed
salt and pepper (optional)

In a large soup pot, brown ground beef (salt & pepper, to taste). Drain. Add onions and taco seasoning, stir well. Add tomatoes, Rotel tomatoes, black beans, corn and water. bring to boil. Reduce heat and let simmer for 10 minutes. Add Velveeta cheese cubes, stirring till melted.

Serve over tortilla chips or Fritos. Also great alone.
