ALMOND COOKIES 
2 sticks butter
1 c. sugar
2 egg yolks
1/2 tsp. salt
1 tsp. almond extract
1 c. finely chopped blanched almonds
2 2/3 c. flour
2 egg whites
Whole almonds

Beat butter, sugar, and yolks until creamy. Add extract; mix. Add flour and salt mix. Add almonds; mix.

Take teaspoon of cookie mixture and roll into ball with hands. Dip each ball in egg white - put on pan. Push thumb in middle of ball to flatten out; put almond on top.

Bake at 350 degrees for 10-12 minutes. These freeze well.
