ALMOND COOKIES 
1 c. sugar
1 c. butter, softened
1 egg
1/2 tsp. vanilla extract
1 tsp. almond extract
2 c. flour, unsifted
1/2 tsp. salt
1/2 tsp. baking soda

Preheat oven to 400 degrees. Cream together sugar, butter and egg, add vanilla and almond extracts. Blend together flour, salt and baking soda; add these ingredients to the creamed mixture. Stir. After dough is thoroughly mixed, pinch of enough to make a walnut sized ball. Place balls on an ungreased cookie sheet about 2" apart. Dip the bottom of a juice glass in water, then in a bowl with sugar. Press each ball with glass just until dough forms a circle. Dip glass into sugar each time. Bake for 8 minutes. Cool on rack. Yield: 4 dozen.
