MICROWAVE BREAD PUDDING 
2 c. milk
1/4 c. butter
5 eggs, beaten
1/2 c. sugar
1 tsp. vanilla extract
4 c. cubed day old or stale bread
1/2 c. raisins
1/8 tsp. ground cinnamon

700 watt oven. Power select: medium. Approximate cooking time: 25 minutes.

Set power select. In a 1 quart glass dish, heat milk and butter for 4 1/2 to 5 1/2 minutes or until milk is scald. Quickly stir in eggs, 1/2 cup sugar and vanilla.

Meanwhile, in a 3 quart casserole dish with inverted glass, in center, arrange bread cubes and raisins. Sprinkle with remaining sugar and cinnamon. Pour milk, bread mixture over bread. Heat covered 17 to 19 minutes or until pudding is set. Served warm or chilled.

Since microwave ovens vary in power, you may need to adjust your cooking time.
