CHICKEN PARMESAN 
2 lbs. chicken pieces
1/4 c. all-purpose flour
1 1/4 tsp. salt
1/4 tsp. pepper
3 tbsp. shortening
1 (14 1/2 oz.) can tomatoes, cut up
1/3 c. Heinz 57 sauce
1/3 c. Parmesan cheese, grated
1 tbsp. sugar
1/4 tsp. oregano leaves
1/4 lb. Mozzarella cheese, cut into strips
Cheddar cheese, grated

Coat chicken with mixture of flour, salt and pepper; brown well in shortening. Place chicken in baking dish. Blend any remaining flour mixture with tomatoes; add Heinz 57 sauce, Parmesan cheese, sugar and oregano. Pour over chicken. Bake, covered, at 350 degrees for 30 minutes. Remove cover; top with cheeses. Bake, uncovered, 25 minutes longer or until chicken is tender. Skim excess fat from sauce. Yield: 4 to 6 servings.
