CRISPY SUGAR COOKIES 
1 c. Crisco shortening
1 1/4 c. sugar
2 eggs
2 tsp. vanilla
2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 400 degrees.

Cream shortening and sugar. Add eggs and vanilla to creamed sugar mixture. Add dry ingredients mixing until smooth. Roll dough into 1-inch round balls, place 2 inches apart on a lightly greased cookie sheet. Flatten cookies with bottom of a glass lightly greased with Crisco dipped in sugar.

Bake 5 to 8 minutes until edges are lightly browned. Makes 4 dozen cookies. Note: DO NOT substitute butter for Crisco. For holiday cookies use colored sugar.
