HONEY GLAZED ROCK CORNISH HENS 
4 (1 lb.) Rock Cornish hens, halved (thawed if frozen)
1 tsp. salt
1 c. chicken broth
1 c. honey
4 tbsp. soy sauce
2 tbsp. dry sherry

Preheat oven to 375°F. Place hens skin side up in large baking dish. Sprinkle with salt and add chicken broth. Cover tightly with aluminum foil and bake for 30 minutes. Meanwhile, combine honey with remaining ingredients. Uncover hens and cook 20 minutes longer or until fork-tender, basting frequently with honey glaze.

Serves 4.
