CORNBREAD SKILLET CASSEROLE | |
2 eggs, slightly beaten 1 c. yellow cornbread 2 tsp. baking soda 1 tsp. salt 17 oz. cream style corn 1 c. milk 1 lb. ground beef 8 oz. grated cheddar cheese 1 lg. onion, chopped 2-4 jalapeno peppers, chopped 1/4 c. vegetable oil Combine eggs, cornbread, soda, salt, corn, milk and vegetable oil. Set aside. Cook beef. Drain well and set aside. Pour 1/2 cornbread. Mix into greased 10 1/2" cast iron skillet. Sprinkle on beef, cheese, onion and peppers. Top with remaining cornbread. Bake at 350 degrees for 45 minutes. Let stand 5 minutes. Serve. |
