OZARK PUDDING 
2 eggs
1 c. sugar
1 tsp. vanilla
1/3 c. flour
1 tbsp. baking powder
1/8 tsp. salt
2 c. peeled apples, chopped
1/2 c. walnuts, chopped
Whipped cream (unsweetened)
Poached apple slices (optional)

In a large mixer bowl, beat together eggs, sugar and vanilla until light and fluffy. Stir together flour, baking powder and salt. Blend into creamed mixture. Fold in apples and walnuts. Pour into a greased and floured 9 x 9 x 2 inch baking pan. Bake at 350 degrees for 30 minutes.
