TABOULEH 
1 c. bulgar wheat

Place in colander and rinse with cold water; drain well.

2 c. snipped parsley
1 lg. cucumber, finely chopped
1/2 c. finely chopped green onion

Combine these with bulgar.

DRESSING:

1/3 c. cooking oil
1/3 c. lemon juice
1/2 tsp. salt
1/8 tsp. pepper
1 clove garlic
1 lg. tomato

Add dressing to bulgar and mix well. Chill several hours or overnight. Before serving, stir in chopped tomato.
