APPLE - STUFFED PORK CHOPS 
6 pork chops, 2 inches thick
1 tsp. salt
Pinch of pepper
5 tbsp. chopped onion
1 1/2 c. crumbled dry bread
3 tbsp. butter
1 lg. apple, peeled, cored, and sliced thin
5 tbsp. seedless raisins
1/2 tsp. nutmeg
1/4 tsp. cinnamon
3 tbsp. water

Split each pork chop through the middle, leaving meat attached to bone and spread open like a book. Pound both sides thin with the edge of a saucer or with a meat mallet. Season with salt and pepper. Saute onion and bread crumbs in butter in heavy skillet. Add thin slices of peeled and cored apple, raisins, nutmeg, cinnamon, and water. Mix everything together and spread on the chops. Fold over and fasten with toothpicks. Place in shallow roasting pan and bake at 350 degrees for about 1 1/2 hours. Turn once during baking and pour off excess fat.
