COCONUT CAKE 
1 box Duncan Hines yellow cake mix
1 box vanilla pudding mix
1 1/3 c. water
4 eggs
1/4 c. Crisco oil
2 c. angel flake coconut
1 c. chopped walnuts or pecans

Mix first 5 ingredients and blend 4 minutes on medium speed. Add 2 cups coconut and 1 cup nuts. Pour into 3 greased and floured cake pans. Bake at 350 degrees for 35 minutes. Then top with 1 box confectioners' sugar and sour cream (as much as it takes to spread on cake). Top with coconut. To make the cake moist, I cook 1 cup coconut with 1 or 2 cups water and sugar and pour over cake before I put on topping.
