CLEAR SWEET PICKLE SLICES | |
1 pkg. sm. green cucumbers, slender 2 1/2 qts. cold water 2 c. salt Put cucumbers into very small jars. SYRUP: 3 qt. white vinegar 6 lbs. sugar Spices as liked in cloth sack Make brine and let slices lay from 5-8 days. Stir and lift up; do not let get too yellow. Drain and put into 2 1/2 quarts hot water with 1 teaspoon alum; soak 1 hour. Drain and put into 2 1/2 quarts water with 3 teaspoons ginger; leave for 1 hour. Drain well. Put into syrup 3 quarts water, 6 pounds white sugar, spices as liked in cloth sack. Put sliced cucumbers into syrup and boil 3-4 minutes, then set away until next morning. Then reheat all and put into small jars. They are clear and sweet and can be used in many ways. Makes several pints. |
