CRISP ONION ROASTED POTATOES 
1 env. onion soup mix
1/2 c. olive or vegetable oil
1/4 c. butter, melted
1 tsp. thyme leaves
1/4 tsp. pepper
2 lb. all-purpose potatoes (cut into quarters, peel if desired)

Preheat oven to 450 degrees. In shallow baking pan blend all ingredients except potatoes. Add potatoes and turn to coat thoroughly. Bake, stirring occasionally, 60 minutes or until potatoes are tender and golden brown.
