CRANBERRY LOAF 
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 c. sugar

Sift together dry ingredients. Then add:

2 tbsp. melted butter
1/2 c. orange juice
2 tbsp. hot water

Combine only until dry ingredients are moistened. Fold in:

1/2 c. chopped nuts
1 c. cranberries, halved
Grated rind of 1 orange

Bake in loaf pan at 325 degrees for about 1 hour (or up to 10 minutes additional). Cool. Wrap in wax paper. Store in refrigerator 24 hours.

I double this recipe and make 3 loaves out of it.
