BIG SISTER'S CHITTERLINGS 
10 lbs. chitterlings
Salt to taste
Pepper to taste
1 onion
6 cups water
meat tenderizer (optional)
green pepper, chopped

Wash and clean the lining of the chitterlings thoroughly. After several washings, place in 8 to 10 quart pot. Place 6 cups of water. Add salt and pepper to taste, vinegar and onion to the pot, and bring to a boil. Boil on medium temperature. Add chitterlings and cook about 4 hours. Add water as necessary.
