CORNBREAD ZUCCHINI CASSEROLE 
1 pkg. cornbread Stove Top stuffing mix
2 c. grated zucchini (cooked or not)
1/2 - 1 c. grated carrot
1 sm. grated onion or 4 tsp. minced onion
1 can mushrooms
1 can cream of mushroom soup
2 kinds of grated cheese

Cook stuffing as directed on package and put on bottom of casserole dish. Sprinkle 1 kind of cheese over stuffing. Spread zucchini over cheese. Sprinkle carrot and onion over zucchini. Spread mushroom soup over all. Sprinkle mushrooms over soup and top with remaining cheese. Cook 30-45 minutes at 350 degrees or until heated thoroughly. Cover with foil after cheese melts.
