KATHY'S SQUASH OR ZUCCHINI
CASSEROLE
 
1/2 c. diced onions
3 tsp. butter
1 tsp. cornstarch
1/2 c. bread crumbs
6 squash (yellow or zucchini)
1/2 c. milk
1 egg, slightly beaten
1 c. grated Cheddar cheese

Saute squash (or zucchini) until just tender. Add cornstarch. Let thicken slightly. Place in a greased casserole dish. Stir egg and bread crumbs together. Stir into squash (or zucchini) mixture. Sprinkle with grated Cheddar cheese. Warm at 350 degrees about 15 minutes.
