HIGH PROTEIN OATMEAL WAFFLES
(BODYBUILDER WAFFLES)
 
1 cup quick-cooking oatmeal
1 scoop (1/3 cup) vanilla or strawberry whey protein powder
1/2 cup low-fat cottage cheese
6 egg whites, divided
1 tsp. cinnamon
1/4 cup water

Spray waffle iron with non-stick cooking spray (Pam).

Combine oatmeal, protein powder, cottage cheese, 3 egg whites, cinnamon and water in a blender. Whip remaining three egg whites until stiff peaks form. Pour batter into egg whites and stir together gently until combined. Spoon into waffle iron and cook until brown and crispy.

Makes about 10 waffles (2 servings because they are so low in calories).

Serve with sugar-free syrup like Cary's or Atkins.
