JENNY'S HIGH PROTEIN APPLE MUFFINS | |
1 cup Bisquick baking mix 1/4 cup great white northern bean flour* 1/2 sugar 1/2 tsp. vanilla extract 1 tbsp. cinnamon 1 egg 1/4 cup oil 1/2 cup applesauce Note: To make bean flour, grind the beans into flour (I use a grinding attachment on my KitchenAid). Preheat oven to 400°F. Combine all dry ingredients into a bowl. Add all wet ingredients and mix on high with an electric mixer until blended well together. Pour into prepared muffin tins and bake at 400°F between 15 to 20 minutes depending on size. Makes 6 muffins. Nutrition: 1/4 cup bean flour = 10 grams of protein; 1 egg = 3.6 grams of protein; 1 cup Bisquick = 9 grams of protein. Submitted by: Jenny Anderson |
