APPLE DUMPLINGS 
6 apples
6 tbsp. sugar
Cinnamon
1 stick cinnamon
1 lemon rind

PASTRY:

2 c. flour
4 tsp. baking powder
1/2 tsp. salt
1/3 c. butter
3/4 c. milk

SYRUP:

2 c. white sugar
1/2 c. brown sugar
2 tbsp. cornstarch
1/2 tsp. salt
2 c. boiling water
1/2 c. butter

1. Sift flour, baking powder and salt into a mixing bowl. Add butter and mix in with a pastry blender or a fork. Add the milk and mix well. Roll the pastry 1/4" thick and cut into 6 (6") squares.

2. Place a peeled and cored apple in the center of each square and sprinkle with one tablespoon of sugar and a little cinnamon. Bring up the corners of the pastry and pinch together firmly. Put in a well buttered baking dish with the cinnamon stick and lemon rind.

3. In a saucepan mix together thoroughly the sugars, cornstarch, and salt. Stir in the boiling water. Add butter and simmer, stirring constantly, until thick and smooth.

4. Pour the syrup over the apple dumplings, cover and bake in a 425 degree oven for about 1/2 hour. Remove cover, baste the dumplings with the syrup and continue to bake, uncovered, until the dumplings are a golden brown. Serve hot. Serves 6.
