BROCCOLI AND CHEESE CASSEROLE 
Use a 1 1/2 or 2-quart size casserole dish.

2 (10 oz. ea.) pkgs. frozen chopped broccoli
1 (8 oz.) pkg. Velveeta cheese, diced
1 sleeve Ritz crackers
1/2 cup (1 stick) melted butter
1/4 cup melted butter (for the base of casserole)

Cook broccoli as directed on package. Crush crackers and mix with 1/4 cup melted butter in bottom of casserole dish; cover with 1/2 of the diced cheese, followed by 1/2 of the broccoli and 1/2 of the crumbs. Add another layer of broccoli and cheese; top with crumbs.

Bake at 375°F for 30 minutes.

So easy. So delicious. Cut recipe in half. This will now become a keeper! I needed a different way to fix broccoli and this is it. I will now use this recipe and a Sweet & Sour Broccoli salad as an alternative way to prepare a vegetable I never really liked. Thanks for submitting.

Well, the recipe doesn't exactly specify what the other 1/2 cup of melted butter, I'm assuming we are supposed to mix it with the other crumbs so that's what I did. Each crumb layer is mixed with butter... not sure if that's what was intended, but it sure tastes great! :) Crowd pleaser, everyone loved it!

My family LOVED this. Very easy. I used fresh broccoli, steaming it before preparing the dish. 10 ounces of frozen broccoli is equivalent to 1 1/2 cups fresh broccoli. Definitely something we will have again and again!!!! Hope I get to the leftovers before my teenage son does. :)

This is a great lazy day dish! Let's add some zip (and a sneaky way to add more nutrition) and instead of crackers, toss in any leftover bread (2-3 cups) that you either buzzed in the food processor until crummy, or hacked by hand into some kind of cube. This is a great way to get finicky folk to eat whole grain, high fiber bread, especially if it is stale. (I'm evil, I know)

Next, throw in some kinda crunch. 1 cup of smashed French's fried onions (no, I don't have any food affiliations), or Kellogg's corn flakes, or even pine nuts (very pricey), soy nuts or sunflower seeds. I buy the latter two at the Dollar Tree store.

For a last bit of zing, zap this concoction with 2-3 dashes of Worcestershire sauce (also at the Dollar Tree), and toss on some more of those fried onions.
