PICKLED EGGS AND BEETS 
2 cans beets
2 doz. eggs
1 c. vinegar
3 1/2 tbsp. sugar
1 tsp. salt

Hard boil eggs. Mix remaining ingredients in pan and bring to slow boil. Remove from heat.

Pour mixture over eggs in large jar (or bowl). Let stand until eggs are light purple. Can be made without salt and low salt beets - still tastes great!
