PICKLED EGGS & BEETS 
1 doz. hard boiled eggs, shelled
1 can sliced beets
1 tbsp. sugar
1 c. vinegar
Dash cinnamon
Dash nutmeg
1 sm. onion, thinly sliced

Drain juice from beets into saucepan. Add vinegar and sugar. Heat just until hot, not boiling. Put eggs, onions, beets and spices in a large covered jar. Pour heated liquid over the eggs. If liquid doesn't cover the eggs and beets add water to cover. Refrigerate overnight.
