MARINATED VEGETABLES 
4 c. salad oil
2 c. red wine vinegar
2 tbsp. sugar
2 tsp. dry mustard
1/2 tsp. pepper
4 (0.5 to 0.6 oz.) pkgs. Italian salad dressing mix
1 sm. head cauliflower, separated into flowerets
6 med. carrots, sliced
1 (16 oz.) can whole green beans, drained
1 (6 to 7 3/4 oz.) can extra lg. pitted ripe olives, drained
1 red onion, sliced in rings
1/2 lb. mushrooms, sliced
1 pt. cherry tomatoes
1 green pepper, cut into strips
Celery & carrots

EARLY IN DAY OR DAY AHEAD: In large bowl, mix well first 6 ingredients. In 4-quart tall glass container, place cauliflower; layer next 7 ingredients on top. Carefully pour dressing over vegetables; cover; refrigerate at least 8 hours. Makes 12 accompaniment servings.
