SPANISH RICE 
1 c. rice
2 tbsp. oil
1 1/4 c. peeled, stewed tomatoes & juice, pureed
1 c. water
1 tsp. salt
Cumin
Garlic powder
Onion

Season to taste.

"Wash" rice in water and drain. Heat oil in skillet over medium heat. Spoon rice into skillet. Stir constantly until rice is golden brown and begins to "pop" like popcorn. Add tomato puree and onions. Stir. Add 1 cup water and salt. Simmer 30 minutes. Add seasoning to taste. Cook until rice has reached desired consistency.
